I LOVE this recipe for raw (and surprisingly enough) dairy free chocolate pudding! Soooooooooooo good, but it does require a little bit of time and patience not just to find the ingredients but to whip up a batch. Trust me, it’s well worth the effort.
From one of my favorite books Raw Food: Real World.
Two cups coconut meat (select fresh, young Thai coconuts that are heavy for their size)
3/4 cup coconut water (add more if you need to thin the mixture)
1/2 cup maple syrup (ok, not raw but still good for you)
1/3 cup agave syrup
1/2 cup raw cocoa powder
2 tablespoons vanilla extract
1/4 teaspoon sea salt.
In a Vita-Mix or high-speed blender, puree all ingredients until completely smooth, stopping to scrape the sides as necessary. Transfer to bowls and chill for a firmer pudding, or eat it straightaway. Try this with raspberries and fresh mint, or chopped nuts.
